Unadapted borrowing from Spanish escabeche, from Andalusian Arabic اَلسُّكَّبَاج (assukkabáj), from Arabic اَلسِّكْبَاجَة (as-sikbāja), feminine of سِكْبَاج (sikbāj), from Middle Persian [script needed] (*sḵbʾk' /*sikbāg/) (whence Persian سکبا (sekbâ)).
